Pro Tip:

Not all dried apricots are the same!

You're probably familiar with the bright yellow-orange variety, which is treated with sulfur dioxide to preserve its color. These tend to have a brighter, slightly tangy flavor. For this recipe, Danielle recommends unsulfured dried apricots, which have a deeper amber-brown color and a naturally richer flavor with notes of brown sugar and malt. They add a wonderful depth of sweetness that pairs perfectly with the other ingredients in this salad.

Why tri-colored quinoa?

While white quinoa will work in this recipe, tri-colored quinoa is Danielle’s favorite choice. It has a firmer texture that holds up beautifully in salads and adds a slightly nutty, earthy flavor that complements the other ingredients. The result is a salad with more texture and flavor.
